Rose Petal Mead
When the dog days of summer are looming,
and when the roses are strongly blooming.
Pick about thirty of them
They must be of the old pink fragrant kind,
In bloom, with the petals loose, not confined
To this, add three cups of golden honey
A dozen pears cut in half and runny.
(over-ripe falls are best)
yes! To this a teaspoon of dry tea leaves
and a fresh sliced lime it gladly receives.
Steam extract all the liquid from this plug
and put it into a large clean glass jug.
add wine yeast,
and let it ferment for about six months,
in India, the time of the monsoons.
In winter, when warmth is sorely vagrant
the mead will be clear, shell pink and fragrant.
(Sit in front of a log fire!)
The warm taste will set memories ablaze,
With a sweet soft song of fine summer days
